WHere is a home-style take on a drink from a new menu. This is a party-sized pre-mixed which is packed with flavours associated with holiday season, making it ideal for a holiday party. Save the extra syrup for morning drinks, puddings, or for additional servings of this cocktail.

Makes enough for 10 guests
For the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar
For the Premix (produces 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Directions
For the Citrus Syrup: Put all the items inside a pan, bring to a simmer, stirring so the sugar melts. Next, turn off the burner and leave to cool completely. Pour into a sealable bottle, seal and refrigerate it in the fridge, where it will keep for up to four weeks.
To make Premix: Mix the specified liquids into one large bottle, allow it to infuse for an hour, then pass it through , ideally through a fine cloth, making it perfectly clear.
For serving: Pour 85ml of the batch mix into your stirring glass filled with ice, and stir carefully for about 60 seconds until cold. Pour into an chilled martini glass or a similar vessel, top with a few cranberries adding the final touch by giving it a brief mist with the mandarin essence over the top.
